Here's a recipe for all those moms out there. It's chicken nuggets with spinach and sweet potato among other things. I own "The Sneaky Chef" book and my sister owns "Deceptively Delicious". The recipes are very similar with subtle differences. I combined the best of both and make these delicious AND nutritious chicken nuggets that Chad likes to steal from time to time. I make enormous batches and freeze them for Sam lunches:
1 lb boneless, skinless chicken breast (cut into nugget-sized chunks)
1/2 tsp salt
1/2 cup whole wheat flour
2 large eggs
1/2 cup sweet potato and spinach puree (to save time, buy two sweet potato baby foods and blend them with spinach that you already washed and steamed)
2 cups breading (1 cup italian bread crumbs, 1 cup wheat germ)
1/2 cup grated parmesan cheese
Olive oil for frying
Work it like this: Have bowl stations. One bowl with the flour, one bowl with the egg, spinach and potato puree all mixed together, one bowl with the breading and cheese.
Lightly salt your chicken chunks, dust in the flour bowl, dip heavily in the puree bowl, roll in the breading bowl and then fry in the olive oil. Fry it and turn as needed (about 2-3 minutes each side), then turn heat down to low and cook for about 10 minutes until the chicken is cooked all the way through. If you get all your stations set up early, it goes pretty quickly and smoothly and they are tastey morsels with vegetables and wheat germ already packed inside.
